Fish & seafood
flavours of the seaAn inherited cuisine
It comes as a surprise to most people that seafood and fish are not
among the most traditional of Sardinian ingredients and that the majority
of fish related recipes in Sardinia are fairly new. The main reason for
this is due to the continual invasion of the island by outside forces.
The people of Sardinia fled inland and settled in the mountainous regions
leaving the coastal regions to marauding invaders. These invaders from
Spain and North Africa amongst others did of course leave their mark on
the cuisine and left behind what can now be considered the inherited coastal
recipes of Sardinia. The Mediterranean waters surrounding Sardinia are
home to some of the finest fish in Europe and the fish market of Cagliari
is the largest in all of Italy.

Alices adventures in wonderland
'Tis the voice of the lobster; I heard him declare,
'You have baked me too brown, I must sugar my hair.'
As a duck with its eyelids, so he with his nose
Trims his belt and his buttons, and turns out his toes.
When the sands are all dry, he is gay as a lark,
And will talk in contemptuous tones of the Shark:
But, when the tide rises and sharks are around,
His voice has a timid and tremulous sound.
